Whether we are in Canada or Casa Mariposa, this is the meal that our family requests the most often.
It’s easy to adjust the quantities, depending on how much of each ingredient you have on hand.
For families who don’t agree on the “best” flavours, you can individualize each person’s quesadilla. Mine has to have some kind of hot pepper, while My Man wants lots of cheese.
Ingredients:
2 tortillas per person, large or small, corn or flour
2 TB oil
1 red (or green) pepper sliced thinly. Can be raw, can be sautéed.
1 cup grated cheese – we prefer Monterey Jack, but have used whatever we had, or could find.
1 onion, sliced thinly. Sometimes we first sauté the onions in olive oil or butter.
1 chili or jalapeno pepper, diced
1-2 cups cooked chicken or beef
Optional sides:
sour cream
pico de gallo or salsa
guacamole
Instructions:
1. Place a layer of vegetables, a layer of chicken or beef, then a layer of cheese on half of the tortillas. Place a second tortilla on top.
2. Lightly coat the bottom of a large frying pan with olive oil on medium heat.
3. Gently place each quesadilla into the pan. Cook about 10 minutes on each side, until cheese is melted and each side is golden brown.
You can switch this up by baking them in the oven for about 10 minutes at 350F.
