It can be easy to lose track of time when you’re in a treehouse. One afternoon we returned from a day at the beach and realized that it was Super Bowl Sunday. Immediately, everybody was dreaming about Super Bowl snacks, even though we would be watching the firefly show on the deck of Casa Mariposa, not a football game. We had all the ingredients in the treehouse so by the time everyone had showered, the potato wedges were ready.
Before you leave home for Costa Rica, we recommend that you download the 1989 Grey Cup, so you can enjoy these tasty potato wedges while watching perhaps the most exciting football championship of all time. Even if this is your first CFL game, you won’t be sorry!
Ingredients:
6 medium size potatoes
¼ cup olive oil
2 green onions, chopped finely
½ cup cheese, grated
¼ cup cooked bacon, chopped finely (bacon slices or bacon bits)
2 cloves of diced garlic
optional:
1 jalapeno, diced finely
Dipping sauce:
½ cup of sour cream (called natilla in Costa Rica)
Directions:
1. Pre-heat oven to 200C (390F).
2. Cut each potato into 6 wedges, and place wedges skin-down on parchment paper on a baking pan or tray
3. Drizzle olive oil onto each potato wedge
4. Sprinkle onion, bacon and garlic onto each potato wedge
5. Cover each potato wedge with cheese
6. Cook for 35 minutes.
Serve with sour cream. Enjoy the 1989 Grey Cup game!
