These tacos are wonderful with the fresh ingredients that are easily available in Costa Rica. Thank you to Pampered Chef for this recipe because it is a perfect dish to make in Casa Mariposa.
Tacos:
Olive oil
2 large, ripe avocados
¾ cup bread crumbs
4 large corn or flour tortillas
Sauce:
1 medium carrot, peeled
½ lime
1/3 cup cilantro leaves
½ cup plain yogurt or sour cream (natilla in Costa Rica)
Pinch of salt
½ tsp Chipotle Rub or 2 tsp brown sugar
1 tsp paprika
1 tsp dry mustard
1 tsp cumin
1 tsp oregano
1 clove garlic, diced
2 tsp diced jalapeno
Dash salt
Directions:
1. Preheat oven to 230C (450F).
2. Lay a sheet of parchment paper over a large pan or baking tray
3. Slice each avocado into quarters.
4. Combine the bread crumbs with Chipotle rub or seasonings, in medium bowl.
5. Lightly rub each avocado slice with oil. Dip each avocado slice into the bread crumb mixture and coat on both sides.
6. Place the avocado slices onto the parchment paper and bake for 10-12 minutes, until they are light golden brown and crispy.
7. Grate the carrot and put in medium bowl.
8. Grate the lime. Save the juice separately.
9. Add lime juice and cilantro to the grated carrot.
10. For the sauce, combine the yogurt, salt and lime zest.
11. Wrap the tortillas in a damp paper towel, place them in a large frying pan, and warm them on low for about 5 minutes.
12. Spread the sauce onto the tortillas. Place 2-3 avocado slices on each tortilla and top with carrot mixture.
